Eating Right says: Corn tortilla stuffed with chicken tenders, onions and green chilies, with Mexican Style rice and sprinkled with cheese

Abi says: I’ve been burned by other ‘healthy’ chicken enchilada meals. I’ve suffered through the bland sauce of Lean Cuisine’s Chicken Enchilada. I’ve endured the mystery meat much of Smart Ones’ Chicken Enchilada. And I’ve been fortunate enough to experience the rapture that is Trader Joe’s Chicken Enchiladas en Salsa Verde.

After trying Eating Right’s Chicken Enchilada, I thought I’d have to admit that I’ve reformed and can now admit a love of healthy enchiladas. That is, until I realized that this meal isn’t really ‘healthy’ at all.

It is simply a small portion size. And with that small portion size comes a complete lack of fullness. Sure, the chicken comes in nicely identifiable chunks and the sauce is well seasoned and creamy and while eating this I kept thinking over and over again ‘Wow, this diet enchilada is fantastic’, but all of the supposed ‘health benefits’ that come with this meal are based on less food and a flavorless side of rice. Bland starches shouldn’t make up the bulk of a meal, but Eating Right seems to think otherwise.

I gave this meal 4 stars because it is significantly better than comparable diet enchilada meals. But you’d be better off just eating the Trader Joe’s chicken enchiladas. That way you’d get to skip the waste-of-space rice and you won’t be tempted into consuming an unhealthy afternoon snack. Why? Because you’ll be full.

Now, that’s a feature that Eating Right just can’t match.

    How can it be an enchilada if it’s not slathered in full fat sour cream?

    Sour cream was made to put on a baked potato. That’s it.

    These Eating Right things have been on sale all summer at my Safeway for $2.00 so I’ve had lots of them and most have been good. I haven’t tried this one however.

    I wouldn’t pony up any more money then $2.00 for one but they’ve all been pretty good except for the 7 Grain Rice Whatchamacalit things which really disappointed me because up till those they were all great.

    Are “Eating Right” entrees available anywhere besides Safeway? Or is it a Safeway product line?

    What I like about the Eating Right entrees is the fact that EVERYONE of them has the EXACT same heating instructions.

    1. Remove tray from outer packaging; pierce plastic film 3-4 times to vent.
    2. Cook on HIGH 4-5 minutes per tray or until hot.
    3. Carefully remove tray from microwave and let sit 1 minute before serving.

    @Crow - I too was a mocker of sour cream on enchiladas (even saying it sort of grosses me out), but the Trader Joe’s enchilada is pretty great.

    @Julie - I’ll have to stop by my local Safeway to look for other varieties.

    @Amy - Eating Right is part of the Safeway private label ‘Lucerne’. They’re carried at the Safeway family of stores, which includes Safeway, Vons, Dominick’s, Randalls, Carr-Gottstein and Genuardi’s.

    @Marvo - You sure have an eye for detail. Oh, and I figured out (from a commercial) that the 5 in that gum name refers to the 5 senses.

    Eating Right is a product of Safeway and only sold at Safeway stores unfortunately. I’ve tried most of them as they are always on sale and heard that they were just as good as the more expensive brands. I haven’t tried one yet that I didn’t like! =)

    The protions are small, true. However, after getting used to it, your stomach will begin to shrink and this protion will become satisfying. remeber, you should eat approx 5 meals a day, as long as the porions are of this size. 5 small meals a day, and you shouldn’t get those hunger cravi8ngs which is the death of any “diet”.

    Well I love this meal not only is the enchillada tasty the side of rice just makes the meal by fat these little meals are great as far as hunger try a yogurt in between it helps. I’ve been eating 2 meals a day and I am down 20 pounds already…..
