The Moosewood Collective says: We start with three different cheeses to create our version of this classic comfort food. We blend sharp Cheddar and Parmesan cheeses with creamy smooth Neufchatel cheese and then season it with just a hint of mustard to give the finished medley its wonderful full-bodied flavor. Smothered over the best pasta we could find, the result is a meal sure the please everyone in your family.

Abi Jones: Upon taking a bite of Moosewood’s macaroni and cheese I was overcome with the worry that something had gone disastrously wrong with my tastebuds. I may not have the palate of Robert Parker, but I know that foods should taste like. . . something. Of this meal I would expect to taste cheese. Instead, I imagined that pasta-water had somehow been made into a solid form. I would call this meal inocuous, but inocuous things don’t make people want to vomit. How does a company with 11 cookbooks manage to produce a macaroni and cheese that makes me long for Lean Cuisine? I can only hope that my outrage is evident enough to prevent the American public from ever buying another box of this vegetarian, organic excuse for food.

    Have you been to the restaurant. It was one of the worst restaurant experiences of my life (and it was years ago, but I still remember the rice was undercooked — WHO can’t cook rice?) After that, I’ve refused to attend any dinner party with recipes from these cookbooks. I’m wholly unsurprised that a Moosewood meal would be underwhelming.

    Wait a minute. I think I may have written a newspaper review for the school paper on this restaurant. I may have to dig out that bit of nostalgia for my blog . . . .

    Well what did you think a mix of Cheddar cheese, Parmesan cheese, Neufchatel cheese and mustard all mixed together would taste like? Hehe.

    I’ve had this meal before, I agree that it isn’t five-star material, but it didn’t make me want to barf. It at least wasn’t as bad as that gut-wrenching Michaelina mac (which I tried really really hard to enjoy before giving up and throwing it away). I’d give it more than zero though. Colleen says Moosewood deserves 2/5.

    Man that was harsh! LOL I personally really liked this mac and cheese. Maybe it’s because I use a simlar recipe and the flavors are similar. To each their own, I guess!

    I live in the dorms at a college in upstate new york and I always buy this mac n’ cheese. It’s my favorite and I think it tastes delicious. Its easy to make in the microwave and its a hell of a lot better than ez mac or any of the low grade stuff. I will probably be buying this mac n cheese for the rest of my life, it definatly deserves at least one star, if not 4.

    Having moved from New York to Upstate New York, they don’t have taste buds up there. This said, it can’t have been as bad as ‘Smart Ones’… I puked within five minutes after I ate that stuff.
