Trader Giotto/Joe says: Grilled - Not Fried
Abi says: Nobody eats grilled eggplant parmesan because it looks good. You eat it because you know that eggplant is healthy, breading is not healthy, and breading doesn’t really microwave that well anyways.
This EP-Parm, as I will now call the dish, provides enough muy delicioso cheese that you won’t miss the breading. Though, if you’re thinking about eating this meal with a plastic spoon, think again. You’ll need a knife and a fork to slice and dice all of the eggplant and gooey cheese. After slicing and dicing you well be left with what appears to be quite seedy eggplant casserole. It is not attractive, but it is delicious and nutritious. Just eat it! It is good for you and tasty too.
Oh, and the other downside about this meal? It requires approximately 14 minutes in a microwave oven. I can bake and cool a batch of cookies in that amount of time! If you’re going to make this at work, make sure that you have patient cube-mates. Also, make sure that you’re using strong utensils, there’s nothing like using a ton of time to microwave something, then being unable to actually eat it because all you have is a plastic spoon.

I’m a giant lover of eggplant. If it came down to deciding between eating cake or eggplant, I’d pick eggplant. But 16 grams of fat? With no breading? Is there really that much cheese? I make delicious eggplant that is breaded and has way less than 16 grams of fat. You can bread it, but don’t fry it- bake it! Mmm, eggplant sounds really good right now. Come to my house and I’ll charge you $1.15 per person. That’s a steal!
Secret shame: I’ve never tasted eggplant. I mean…I see it sometimes, but I have no idea how to prepare it or make it taste good. 16 grams does seem like a lot for a healthy, non-breaded meal, but it can’t be any worse than the stuff I eat anyway.

Ace - If you’re new to eggplant, I recommend trying Baba Ghanouj. It is a dip that one eats with pita bread. Delicious.

One caveat…the author makes it sound like all these different cooking options are all ’steps’ to one recipe. Don’t be fooled. You needn’t fry it AND grill it.
Oh, and I agree with Abi - Baba Ghanouj is the best thing ever. I’m partial to the Moosewood Collective’s version, but just about any recipe with eggplant and tahini will do ya.

i bought this duder once before and was dismayed to discover that there was no pasta in it. the homemade eggplant parm was kinda like an eggplant lasagna. i took about two bites of this dish and saved the rest for the next day when i had brought in some noodles. awesomeness ensued.
I have an update for you: I just bought this yesterday and it had only 140 grams ( the WHOLE thing) , and the directions called for only 8 minutes in the microwave. Absolutely delicious.
It also now has a black carton instead of white, leading me to believe they did indeed give this a makeover.
Well I just bought it and it took only four minutes…three serving in one pack, still fairly high fat content, so I blew my targets today between this and the middle east feast!
